Most online sources (in English) say that Japanese short grain rice is a 1:1 ratio of rice to water.

That’s 10-20% more water (that you didn’t add)! For 1 cup (180 ml or ¾ cup) of rice in a rice cooker, you need 200 ml of water instead of 180 ml.

If you want to use a 1:1 ratio, soak the rice in water for 20-30 minutes (another 10-20%) and drain thoroughly before adding the measured water to the 1:1 ratio. . In this way, you have given the rice the moisture it needs.

Every time I cook the rice at the indicated level, the rice is very dry.
