Today I’m sharing an easy, nutritious and juicy soup that I’ve been making for the past few weeks. I can’t tell you how much of a recipe this was when you’re trying to juggle work schedules and refereeing (oops, I mean parenting) and homeschooling. This delicious and flavorful soup can be made with any vegetable you have in the growler and stored in the pantry. My favorite combination of vegetables is broccoli (high in immune-boosting vitamin C), squash, carrots, and frozen beans, and I’ve detailed the amounts I use in my recipe below. You can use whatever veggies you like as long as you have at least 8 cups of chopped veggies (see my tip below for tips!). I’ve also provided two different cooking methods: the hands-free Instant Pot method and the traditional (but still simple) stovetop method. The beauty of this soup is that it’s easy to make – we just add the ingredients to the pot and let it cook! The delicious aroma of the soup comes from the use of a large amount of red pepper flakes. I like 2 tablespoons over medium heat, but if you’re not a fan of high heat, start with 1 tablespoon and go from there.
