Ten years ago, when we moved into a house without electricity, I was worried we wouldn’t have enough electricity to make waffles, so I started looking for a waffle iron (and other tools).

After we moved in, we found that our solar panel installation would generate electricity most of the year, especially during the summer. That was enough to support a waffle maker.

I’ve made waffles in at least a dozen different types of waffle makers, from modern Teflon-coated models to older aluminum models and half a dozen different types of non-electric waffle makers (even fireproof models).

This separation still allows the waffle iron to get very hot, but provides even heat with no hot spots. This will cook your waffles evenly, giving them a nice crunch on the outside.

This type of waffle iron works best on modern gas stoves because the flame pattern cooks faster at the edges than in the center, which has no space in between.

Tips For Cleaning Your Waffle Iron

If you are looking for a version that lasts a lifetime, like an old version, I recommend the high quality version made by Skeppshult. They are thick enough to distribute heat evenly and well made so they are easily seasoned to prevent sticking.

You’ll want to use an old-fashioned waffle recipe that has a lot of butter in the batter, which will bring out the flavor of the waffle (and help keep it from sticking). Modern “low fat” waffles don’t work well, I’ll add the old recipe I used last time.

Never wash your cast iron waffle maker with water (and certainly not with soap). It only needs to be wiped with a dry towel (or paper towel) after use.

I use a silicone brush to brush the center of each waffle with melted or red butter. If you can get food-safe brushes, an old-fashioned natural bristle brush will work too.

Heat the pan over high heat, just below the smoke point of the oil you are using. Flip the skillet once or twice so both sides are hot.

Then grease the baking sheet as described, grease all corners on both sides.

Then pour the waffle batter. You want to fill the pot, but not enough to fill it.

Each pan has a different amount of batter, so it’s a matter of trial and error until you get the exact amount for your pan. My favorite soup uses chopsticks and holds two pots full.

After washing the bowl, close the waffle maker and immediately turn it over to the other side.

This will help fill the waffle iron completely. The same principle is used in modern Belgian waffle makers, and you won’t get that kind of breath from a plug-in waffle maker that doesn’t spin.

Flipping the waffle maker immediately will prevent overcooking the first side and ensure that both sides are crispy. Cook on the other side for 2-3 minutes, then return to the original side for another 2-3 minutes.
