From a food safety point of view, it is better because it limits the growth of bacteria. It’s also super quick – the scallops were fried in 25-30 minutes, which was great!

1. Place the scallops on a clean kitchen towel on a kitchen counter. Place another clean towel on top of the scallops, and press gently on the towel to remove any liquid. Let the scallops sit at room temperature for 10 minutes while drying with a towel.

2. Sprinkle salt and pepper on both sides of the scallops. Heat 1 tablespoon oil in a 12-inch nonstick skillet over high heat until smoking. Add half of the scallops in a single layer, cut side down, and cook for 1 1/2 to 2 minutes, until nicely browned.

3. Add 1 tablespoon of butter to the pan. Turn the scallops with the tongs and continue to cook, using a large spoon to baste the scallops with the melted butter (tilt the pan so the butter moves to one side) until the sides are firm and the center is opaque, 30 to 90 seconds longer (remove the small scallops when they finish cooking). Transfer the scallops to a large plate and cover loosely with aluminum foil. Dry the pan with paper towels and repeat the cooking process with the remaining oil, scallops and butter. Serve immediately with lemon wedges or vinaigrette.

In a medium bowl, combine the orange juice, lime juice, shallots, cilantro, and chili flakes. Slowly add vegetable oil and olive oil. Add salt to taste.
