Either way: new pan or old pan, you can follow these steps. To get started, you will need a few things:

Unsaturated fats are best for flavor because their chemical structure is more reactive than saturated fats. This makes it easier to polymerize than metal. Saturated fats, such as lard and lard, were often cheap, easy, and unsaturated in the past, but from a molecular point of view, they were not good.

After the pan is dry (and cooled), drop the oil on the pan with a paper towel. You want to cover the whole pan with a thin layer: top, bottom, sides and handles. Be careful to remove excess – the oil left on the pan will stick after heating, which is not what we are looking for! When this step is completed, the pan should look almost dry.

Once oiled, place your cast iron on the stove and turn it to 450F. It may be helpful to place aluminum foil inside the bottom shelf to catch water droplets. (However, if you apply only a thin layer of oil, it will not be.) Bake for an hour.

Close the oven and let it cool by closing the oven door. It may take some time, so be patient! When the dish is completely dry, remove it.

Brush the inside of your pan with a thin layer of oil. It is great if you leave linseed oil around. Otherwise, a little grape seed oil will do the trick. Place the pan on the stove and heat until it starts to smoke. Turn off the heat and leave to cool. This process prevents fat swelling.
